I’m a bit of a book hoarder and after moving houses more than 4 times in as many years I’ve had to re-home several (large) boxes full and get myself a library card instead. But what I’ll never give up is cook books. Love them. Seriously is there anything better than food porn with a side of insight from the author?!
So today the gorgeous Belinda Norton shares a divine recipe with us that we all need in our lifes, like yesterday.

Banana, Caramel and Peanut Butter Parfait
Serves 1
2 peeled, frozen bananas
1 scoop vanilla protein powder (optional)
2 tablespoons peanut butter or your choice of nut or seed butter
1 fresh banana, peeled and sliced
30 g (¼ cup) rolled oats
125 g (½ cup) coconut yoghurt
1 teaspoon good-quality caramel sauce
Method
Combine the frozen bananas and protein powder, if using, in a blender and blitz to a smooth consistency.
Pour one-third of the blended banana into a clean serving glass or jar. Top with 1 tablespoon of the peanut butter.
Arrange the banana slices around the inside of the glass or jar, then add the oats, reserving a few to garnish.
Dollop in half the yoghurt, then drizzle over half the caramel sauce. Add another third of the blended banana, then the rest of the yoghurt.
Add the remaining blended banana, peanut butter and caramel sauce, and finish with a scattering of oats.
