Sometimes we just get so set in our routine and ‘usual’ that we miss out on so much goodness.

Like this Macadamia & Coconut Butter.

Until you taste the smooth, smooth delicious goodness you really have no idea. It will put all your of your other nut butters to shame, an you may never be able to eat plain ol’ peanut butter again.

All you need is a high powder blender (KitchenAid is what we used) and you are half way there!

Perfect on its own with little bread, on fruit or hell, grab a spoon and good luck stopping at one..

M A C A D A M I A & COCONUT BUTTER

Makes 2 cups

500G MACADAMIA NUTS

30ML COCONUT OIL

PINCH SEA SALT

Method:

1 . Combine the nuts and oil in the Thermal Control Jar of the KitchenAid Pro Line Series Blender. Secure the lid and turn dial to speed 1. Slowly increase speed to medium-high (speed 8). Blend, using Flex Edge Tamper to push down ingredients until smooth, creamy butter forms, about 1 minute.

2 . Blend in of pinch salt. Store in airtight container in refrigerator for up to 3 weeks.

Chef tip: you can add 2 1/2 tablespoons of maple syrup, 2 teaspoons cocoa powder and 25g of dark chocolate to the blender during step 1 to make CHOCOLATE MACADAMIA SPREAD. Delish!
