This is perhaps the most simple, easy coconut bread recipe you will find, and that fact it only contains 3 ingredients is definitely a crowd pleaser, but what will really win you over is the taste.

It’s gluten, dairy and sugar free which ticks all the boxes for me, can be eaten sweet or savoury, and has the perfect amount of moisture and light crumbly texture.

And the best part? It takes only a couple of minutes to prepare.

Preheat the oven to 140C, and line a loaf tin with baking paper.

6 free range eggs
3 cups of desiccated coconut
1 tsp baking soda

** I now add 1 banana to this mix – delish! **

optional extras:
1 tsp vanilla bean paste or extract
2 tbsp honey to add a subtle sweetness
1tsp cinnamon

Add the eggs, coconut and baking soda to a Vitamix or food processor. Blend until combined, then pour (or scoop) into your bread tin. Bake for 45 minutes, or until a skewer comes out clean when inserted.

If you have the will power leave to cool before eating… simply lift out, and slice thickly (too thin and it will crumble).

BUT if you really want to win over your loved ones with some wow factor then use this bread to make sweet French toast paleo style!! For the batter simply add to a bowl a small tin of coconut cream, 2 eggs, cinnamon and a dash of vanilla extract mix, then cover a thick slice of coconut bread with the mixture, then cook in a frypan – too easy!!!! Then top with grilled banana and pecans with a splash of organic maple syrup. Heaven.
