The last two months have been seriously busy (but amazing so no complaints from me) so come Sunday night I am more than ready to have some quality one on one time with the couch, bad TV and a little sweet something something.

But what do you do when you have nothing in the fridge ready to go and limited dry goods in the cupboard?

You free style of course.

This means no recipe, no measurements (aka pouring straight from the packet), experimenting with ingredients and hope for the best. Most of the time everything works out fine, its edible and it covers whatever craving I am having at the time. However last night’s creation worked out particularly well.

I call it the Coco Choc Berry cake with layers of amazingness: a nutty caramel base, berry sorbet ice-cream, coconut and lastly, raw chocolate to top it all off.

The below are just estimate quantities of what was used – follow your intuition (and taste buds) and you will be fine!!

Ingredients:

Base

Cashews ½ cup (can add more for a thicker base)

Pecans ½ cup

Dates 13

Desiccated coconut 1/3  cup

Coconut oil 1 tbsp

Berry layer

Frozen mixed berries ½ cup

Almond milk small splash

Cinnamon 2 tsp

Dates 5

Coconut layer

Desiccated coconut 1/3  cup

cinnamon

Cacao powder ½ cup

Raw honey 2 tbsp

Coconut oil ½ cup

Method:

Base – mix all ingredients in either your Vitamix or food processor until it forms a dough like consistency. Press into paper lined dish and place in freezer to set.

Berry layer – mix everything in Vitamix until it is combined. Don’t over process it because you want some texture still. Then spread thin layer onto base pop back into freezer while you prepare the next two layers.

Coconut layer – simply apply a thin layer of desiccated coconut and cinnamon and place in freezer to set before adding on the raw chocolate.

Raw chocolate layer

In a bowl place almost equal parts cacao powder, coconut oil and squeeze of honey – mix (either by hand or hand whisk) then pour on top of cake and put back to set for another 5+ minutes. Don’t go overboard here, keep it a thin layer otherwise cutting the cake will be a nightmare!
