I went through a stage a few years ago where I ate lot of protein bars simply because I was busy and it was an ‘easy’ option to grab while at night lectures. Although if I am being completely honest, it was mostly the chocolate which coated them I craved…
I know, I know, me of all people should have known better and deep down I knew my fast growing addiction to them was bad, yet I still convinced myself it was ok because it was a ‘sports’ bar so it had to be healthy.
Luckily I weaned myself off them (and processed sugar) and through trial and error created a nourishing alternative , full of superfoods, vitamins, protein and essential fats.
They are raw and paleo friendly but best of all, tastes amazing.
Don’t be too fazed with measurements or ingredients, just add a bit of everything and anything that is in your cupboard, mix and pop in the freezer to set. It couldn’t be easier!
Raw superfood Protein bars
½ cup almonds (soak to activate them first)
½ cup walnuts (soak to activate them first)
2 scoops of protein powder (I use 180 Superfood protein or Bare Blends)
½ cup desiccated coconut
10 dates (soaked first to soften)
2 tbps chia seeds
2 tbps sesame seeds
2 tbps raw cocao
2 tbps coconut oil
1-2 2 tbps raw honey
Optional: goji berries, cinnamon, vanilla bean paste
Method:
I simply place everything in my Vitamix (or food processor), mix, then press firmly into a tray and pop in the freezer to set.
Remove and place on a chopping board and slice into bars.
Tip: best to keep these in the freezer so they stay firm.

You can tell that I’m still ‘wet behind the ears’ with all of this type of eating, can’t you?!) Well, I’m WAY excited bout entering into the world of clean & healthy eating! Yes it is confusing isn’t it as the names are oh so similar!! Raw COCAO is the stuff you want as it contains all the goodies in it (usually buy from a health food shop or wholefoods etc).
Cocoa is the common commercial powder which has undergone lots of processing using chemicals and heat. As a result of this, many of the beneficial nutrients have been destroyed.
Raw cacao can be used in baking, smoothies, superfood balls, hot chocolate, or you can even make your own raw chocolate with it.
You actually can make this recipe without it – I just add a little for a hint of chocolate flavour 🙂

I cannot wait to make these for my boys to have as a snack in their lunchbox as they always complain we are the healthiest family they know (and trust me there is so much room for improvement) and that all the kids have yummy (unhealthy) treats everyday except for them!

Hi Jaimee I use what ever is in the cupboard!! Medjool dates are always a little bit more caramel like and delish but as I make in bulk most of the time it is plain ol dates as they are a tad cheape!
Is it possible to get the total of protein, carbohydrate/sugars per 100g?
