This divinely easy and healthy recipe came from Teresa Cutter, The Healthy Chef (www.thehealthychef.com) and I urge you to make them asap for a guilt free snack.

You could substitute some of the almond meal for protein powder to give them an extra boost.

These babies are paleo friendly, sugar free and FITC approved!

Blueberry & Apple muffins

300 g (3 cups) almond meal

2 teaspoons gluten-free baking powder

4 free range eggs

60 ml (1/4 cup) macadamia nut oil

1-2 teaspoon ground cinnamon

2 tablespoons pure maple syrup

1 apple (skin on) chopped into small pieces

200g blueberries (frozen is fine)

 

Preheat the oven to 170°C (325°F)

Combine the almond meal and baking powder in a large mixing bowl (or in the Vitamix), then add the eggs, oil, cinnamon and pure maple syrup to form a batter.

Fold in the apple and blueberries then spoon the batter into paper lined muffin tins. This can make 6 big muffins or 12 smaller ones – I of course went for the bigger option!

Bake for 35–40 minutes until cooked through and golden.
